A HISTORIC pub in Pwllmeyric has appointed the sous chef at the Terry M restaurant as it's head chef for when it re-opens at the end of this month.

The New Inn pub which was taken over by Peter and Chantal Ferrer, of Mathern, in May last year will open on January 30 after refurbishment.

Aidan Fisher will become the new head chef of the pub and has worked for the past four years at the Terry M restaurant in the Celtic Manor Resort under Tim McDougall.

While he was working at the restaurant, it was awarded the coveted 3 AA Rosettes award.

Mr Fisher is looking forward to the regeneration of the New Inn, creating seasonal traditional dishes and using local ingredients.

He said: “I'm looking forward to using the best of local, seasonal produce to deliver exciting food with big flavours, fresh baked bread every day, home-made ice cream, curing charcuterie and as soon as possible growing our own vegetables, salad and herbs."

The pub was sold by Punch Taverns in the summer of 2014 and the new owners hope to make it a community hub which can be used by different community groups and aim to showcase the work of local photographers.
