A CHEF from Abergavenny will join some of the world’s most esteemed culinary masters next month as he heads to the London Restaurant Festival.
Shaun Hill, 64, head chef at the Walnut Tree, is one of a select group of chefs heading to Fortnum & Mason in London’s Piccadilly Circus to cook for their guests in the store’s Culinary Carnival during the third London Restaurant Festival, which will take place from October 3-17.
During the festival, London will become the focus for food lovers and industry professionals from around the world, and Mr Hill is keen to help put Monmouthshire on the map.
Speaking to the The Guide, he said: “I am really looking forward to the event.
“I went last year and it was very successful, but I think this year it’s going to be even bigger.
“I have had one of the chefs from Fortnum and Mason visit the Walnut Tree, where I have showed him how to cook and prepare the dishes I will create in Piccadilly.
“Two of the dishes will be turbot with spiced mussels and clams, and a roast crown of Partridge dish, both popular at the Walnut Tree.”
He added: “It’s always really interesting to go to an event like this and represent a rustic restaurant from Abergavenny, and show them how it’s done.”
Mr Hill will be cooking at Fortnum and Mason on October 5 and 6.
